Ingredients


1½ cups graham cracker crumbs

⅓ cup granulated sugar


6 tablespoons melted butter


1 (14 oz) sweetened condensed milk


2 large egg yolks


1 tablespoon lemon juice


½ teaspoon vanilla extract


¼ teaspoon salt


2½ cups fresh blackberries


2 tablespoons sugar


1 tablespoon cornstarch


½ cup chopped pistachios for topping



Instructions


1. Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper.



2. Mix graham crumbs, ground pistachios, sugar, and melted butter until evenly combined.



3. Press firmly into the bottom of the pan. Bake 10 minutes until lightly golden.



4. In a saucepan, cook blackberries and sugar over medium heat until juices release, about 4–5 minutes.



5. Stir cornstarch with 1 tablespoon water, add to berries, and cook until thickened. Remove from heat.



6. Whisk condensed milk, egg yolks, lemon juice, vanilla, and salt until smooth.



7. Pour filling over warm crust and spread evenly.



8. Spoon blackberry mixture over the top in an even layer.



9. Sprinkle chopped pistachios generously over everything.



10. Bake 22–25 minutes until center is just set.



11. Cool completely, then refrigerate at least 2 hours before slicing.
