Pineapple Layered No-Bake Dessert Tropical Cream Cheese Cloud With Buttery Graham Crust

There are desserts that demand a hot oven and careful timing, and then there are desserts that reward you for barely lifting a finger. This pineapple layered no-bake dessert sits firmly in the second camp.

It’s cool and creamy, with three distinct textures: a crisp, buttery graham cracker crust at the bottom, a fluffy cream cheese and whipped cream layer in the middle, and a glossy pineapple topping that tastes like sunshine.

Everything is built in a glass dish so the layers are visible from the side, making it as pretty as it is refreshing. Because it chills instead of bakes, it’s ideal for warm weather, holidays when oven space is tight, or days when you want dessert ready ahead of time.

What Makes This Dessert So Good

No baking required. The crust sets in the fridge rather than the oven. Melted butter and sugar hold the graham crumbs together firmly enough to cut into neat squares.

Light but rich middle layer. Cream cheese adds tang and structure, while whipped cream keeps the texture airy and mousse-like.

Bright pineapple finish. Canned pineapple tidbits are simmered briefly with their juice, sugar, and cornstarch so the topping thickens into a shiny glaze that holds its shape in tidy cubes.

The layers are distinct but complement each other perfectly: the crust adds crunch and a hint of salt, the creamy middle mellows the sweetness of the fruit, and the pineapple topping makes each bite taste tropical and refreshing.

Ingredient Breakdown

Graham crackers, sugar, and butter form a classic crumb crust. Crushing the crackers finely and pressing them firmly into the dish creates a base that slices cleanly without crumbling all over the plate.

Cream cheese is the backbone of the middle layer. It needs to be fully softened so it blends silky-smooth, without lumps.

Powdered sugar and vanilla sweeten and flavor the cream cheese without adding graininess.

Heavy cream is whipped separately and folded in, so the filling is light and fluffy instead of dense.

Pineapple tidbits with juice are easy and consistent year-round. The juice is thickened with cornstarch and sugar to form a pudding-like glaze that suspends the fruit pieces. A splash of lemon juice brightens the flavor and balances the sweetness.

Tips For Perfect Layers

1. Pack the crust firmly. Use the bottom of a glass or measuring cup to press the crumbs down tightly. This keeps the crust from falling apart when sliced.

2. Use room-temperature cream cheese. Cold cream cheese clumps and refuses to smooth out. Let it sit out 30–45 minutes before mixing.

3. Whip the cream to stiff peaks. The cream should be thick enough that it holds its shape on a spoon. If it’s too soft, the middle layer will slump.

4. Cool the pineapple mixture before assembling. It should be just barely warm—no hotter—when spooned over the cream layer, so the layers stay distinct.

5. Chill thoroughly. Minimum chill time is 4 hours, but overnight gives the best sliceable texture.

Make-Ahead And Storage

This dessert is designed for making ahead:

Assemble it up to 24 hours in advance and keep covered in the refrigerator.

Leftovers stay delicious for 3 days, though the pineapple topping may release a bit of extra juice after that.

For the neatest squares, slice it straight from the fridge with a sharp knife, wiping the blade clean between cuts.

Variations

Coconut twist: Fold ½ cup shredded coconut into the cream layer and sprinkle a little more over the crust before adding the filling.

Lime version: Replace the lemon juice in the topping with lime and add a teaspoon of lime zest to the cream layer.

Lighter option: Swap half the whipped cream for plain Greek yogurt for a tangier, slightly lighter filling.

Pineapple Layered No-Bake Dessert Recipe

Pan: 8×8-inch or 9×9-inch glass dish

Yield: 9–12 servings

Ingredients

Crust:

2 cups graham cracker crumbs (about 16 full crackers), finely crushed

¼ cup granulated sugar

½ cup (113 g) unsalted butter, melted

Creamy Layer:

12 oz cream cheese, softened to room temperature

½ cup powdered sugar

1 tsp vanilla extract

1 cup cold heavy whipping cream

Pineapple Glaze Layer:

1 (20-oz) can pineapple tidbits in juice, drained (reserve juice)

½ cup reserved pineapple juice (top up with water if needed)

¼ cup granulated sugar

2 tbsp cornstarch

1 tbsp lemon juice (optional but recommended)

Optional Topping:

Sweetened whipped cream, for serving

Instructions

Prepare the crust:

1. In a medium bowl, combine graham cracker crumbs and granulated sugar.

2. Pour in melted butter and stir until every crumb is evenly moistened and the mixture resembles wet sand.

3. Press firmly into the bottom of the glass dish in an even layer, using the bottom of a glass or measuring cup to compact it well.

4. Place the dish in the refrigerator for at least 20 minutes while preparing the next layer.

Make the creamy filling:

1. In a mixing bowl, beat softened cream cheese with an electric mixer until completely smooth and lump-free.

2. Add powdered sugar and vanilla; beat until creamy and well combined. Scrape down the bowl as needed.

3. In a separate chilled bowl, whip heavy cream to stiff peaks.

4. Gently fold the whipped cream into the cream cheese mixture in two or three additions, using a spatula and light strokes to keep the mixture airy.

5. Spread the filling evenly over the chilled crust, smoothing the top.

6. Return the dish to the refrigerator while you prepare the pineapple layer.

Cook the pineapple topping:

1. In a small saucepan, whisk together pineapple juice, sugar, and cornstarch until no lumps remain.

2. Set over medium heat and cook, stirring constantly, until the mixture thickens and comes to a gentle boil. This will take 3–5 minutes; it should have a glossy, pudding-like consistency.

3. Remove from heat and stir in lemon juice.

4. Let the mixture cool for about 5–10 minutes, stirring occasionally so a skin doesn’t form. It should be just warm, not hot.

5. Fold in the drained pineapple tidbits until they are evenly coated in the glaze.

Assemble the dessert:

1. Remove the dish from the refrigerator and gently spoon the pineapple mixture over the cream layer.

2. Spread carefully into an even layer all the way to the edges, taking care not to disturb the creamy layer beneath.

3. Cover the dish tightly with plastic wrap or a lid.

4. Chill for at least 4 hours, or overnight, until completely cold and set.

Serve:

1. When ready to serve, cut into squares using a sharp knife. Wipe the knife clean between cuts for sharp, tidy edges.

2. Top each serving with a swirl of whipped cream if desired.

Every slice delivers a buttery crunch, a cool, creamy middle, and sweet pineapple on top—the kind of easy dessert that feels like vacation in a pan.
