Pecan pie is a Southern classic built from simple pantry ingredients — sugar, eggs, syrup, and pecans — baked into a rich filling. Combining the two creates something that feels both traditional and indulgent, like two beloved desserts layered into one unforgettable centerpiece.

Pecan Pie Cheesecake



Ingredients — Pecan Crust


• 2 cups (200 g) graham cracker crumbs


• 1/2 cup (55–60 g) finely chopped pecans


• 1/4 cup (50 g) packed light brown sugar


• 1/2 teaspoon fine sea salt


• 1/2 cup (113 g) unsalted butter, melted



Ingredients — Cheesecake Filling


• 32 oz (900 g) full-fat cream cheese, softened


• 1 1/4 cups (250 g) granulated sugar


• 2 tablespoons (16 g) cornstarch or 3 tablespoons (24 g) all-purpose flour


• 1/4 teaspoon fine sea salt


• 1 cup (240 g) full-fat sour cream, room temperature


• 1/2 cup (120 ml) heavy cream, room temperature


• 1 tablespoon pure vanilla extract


• 4 large eggs, room temperature


• 2 large egg yolks, room temperature



Ingredients — Pecan Pie Caramel Topping


• 1/2 cup (113 g) unsalted butter


• 1 cup (200 g) packed light brown sugar


• 1/2 cup (120 ml) heavy cream, room temperature


• 1/4 cup (60 ml) light corn syrup or golden syrup


• 1 teaspoon vanilla extract


• 1/2 teaspoon fine sea salt


• Pinch flaky salt, optional


• 2–2 1/4 cups (200–225 g) pecan halves, toasted



Instructions


  1. Preheat oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment and lightly grease the sides. Wrap the outside tightly with 2–3 layers of heavy-duty foil. Bring a kettle of water to a boil.

  2. In a bowl, combine graham crumbs, chopped pecans, brown sugar, and salt. Stir in melted butter until evenly moistened.

  3. Press mixture firmly into the bottom of the pan and slightly up the sides. Bake for 10 minutes. Cool slightly and reduce oven temperature to 325°F (163°C).

  4. Beat cream cheese on medium speed for 2–3 minutes until completely smooth.

  5. In a small bowl, mix sugar, cornstarch (or flour), and salt. Add to cream cheese in two additions, mixing on medium-low until smooth.

  6. Add sour cream, heavy cream, and vanilla. Mix on low just until smooth and creamy.

  7. Add eggs and yolks one at a time, mixing on low only until incorporated. Stir gently by hand to release large air bubbles.

  8. Place foil-wrapped pan into a large roasting pan. Pour batter over crust and smooth top. Set roasting pan in oven and pour hot water around the springform pan to halfway up the sides.

  9. Bake 70–85 minutes. The edges should be set while the center still jiggles slightly.

  10. Turn off oven, crack door open, and let cheesecake cool inside for 45–60 minutes.

  11. Remove from water bath, take off foil, run a knife around the edge, and cool to room temperature. Cover and refrigerate at least 8 hours or overnight.

  12. Toast pecans in a dry skillet over medium heat for 4–6 minutes until fragrant. Cool slightly.

  13. In a saucepan, combine butter, brown sugar, heavy cream, and corn syrup. Cook over medium heat, stirring until dissolved and boiling.

  14. Let boil for 3–4 minutes without stirring until slightly thickened and glossy. Remove from heat, stir in vanilla and salt, and cool 10–15 minutes.

  15. Stir toasted pecans into warm caramel until coated.

  16. Remove cheesecake from pan and transfer to a serving plate. Spoon caramel pecans over the center, guiding some toward the edges.

  17. Chill at least 1 hour to set topping. Slice with a hot knife for clean cuts.
