Mint Melt Away Snowball Cookies That Taste Like Cool Peppermint Buttercream And Crumble Like Fresh Snow

A tender melt-away snowball cookie made with butter, cornstarch, powdered sugar, and peppermint extract for ultra-soft cookies that stay pale, roll into perfect rounds, and finish with a thick double coating of powdered sugar.

There is something almost magical about a cookie that feels like it disappears the moment it touches your tongue. These mint melt away snowball cookies have that exact quality. They are soft, delicate, and buttery, with a cool peppermint note that lingers just enough to feel refreshing without overpowering.

I remember the first time I made a batch like this, expecting something simple and familiar. But the texture was completely different from most cookies—lighter, softer, almost powdery in the best way. That contrast between the rich butter and the cool mint made them feel like something special, the kind of cookie that quietly becomes a favorite.

What makes these cookies stand out is how balanced they are. The sweetness is gentle, the peppermint is smooth and not too sharp, and the texture is so soft that each bite feels almost weightless. It’s the kind of cookie you reach for again without even thinking about it.

What “Melt Away” Really Means In Baking

Melt-away cookies are known for their delicate texture. Instead of being chewy or crisp, they break apart softly and seem to dissolve as you eat them.

This comes from the combination of powdered sugar and cornstarch. Powdered sugar blends smoothly into the dough, while cornstarch reduces gluten formation, keeping the cookies soft and tender. The result is a fine, delicate crumb that feels completely different from traditional cookies.

Fun Kitchen Science Behind That Cool Mint Flavor

Peppermint has a natural cooling effect that comes from menthol interacting with receptors in your mouth. That’s why these cookies feel refreshing even though they’re rich and buttery.

When paired with powdered sugar and vanilla, the peppermint becomes smoother and more rounded. Instead of being sharp, it takes on a soft, almost creamy quality that works beautifully with the delicate texture of the cookie.

How To Keep The Cookies Pale And Perfectly Round

These cookies are meant to stay light in color, which helps highlight their soft texture. Baking at a slightly lower temperature prevents deep browning and keeps the appearance gentle and even.

Chilling the dough before baking helps the cookies hold their shape. The butter stays firm longer in the oven, allowing the cookies to bake into smooth, round domes rather than spreading out.

How To Get That Thick Powdered Sugar Coating

The signature coating comes from rolling the cookies twice. The first roll happens while they are still warm, allowing the sugar to cling and lightly melt into the surface.

After the cookies cool, a second coating builds that soft, snowy finish. This creates the thick, velvety layer that gives them their signature look and delicate sweetness.

Equipment Needed

Baking sheet

  • Parchment paper

  • Mixing bowl

  • Hand mixer or spoon

  • Cookie scoop

  • Shallow bowl for sugar coating

Ingredients And Why Each One Matters

  • butter creates richness and that soft, delicate texture

  • powdered sugar sweetens while keeping the crumb fine

  • vanilla smooths and rounds out the flavor

  • peppermint extract adds the cool mint flavor

  • salt balances sweetness

  • flour provides structure

  • cornstarch creates the melt-away texture

  • gel green food coloring adds a soft mint hue

  • powdered sugar for rolling creates the snowy coating

Time And Money Saving Tips

Make a double batch and freeze half of the dough balls. They can be baked straight from frozen with only a slight increase in baking time.

Baking these a day ahead can actually improve the texture. The cookies become even softer, and the flavors blend more smoothly after resting.

Substitutions That Work Well

For a milder mint flavor, reduce the peppermint extract slightly. For a stronger flavor, keep it balanced so it doesn’t overpower the butter.

If you prefer not to use food coloring, simply leave it out. The cookies will still have the same texture and flavor, just without the soft green tint.

Serving And Pairing Suggestions

These cookies pair beautifully with coffee, tea, or hot cocoa. Their light texture and refreshing flavor make them especially nice alongside rich or chocolate-based treats.

They also fit perfectly into a dessert spread, adding a soft, delicate option among richer baked goods.

Storage And Make-Ahead Tips

Storage: Keep in an airtight container at room temperature for up to 5 days.

Make-Ahead: Shape dough balls and refrigerate or freeze until ready to bake.

Freezing: Freeze baked cookies and re-roll lightly in powdered sugar before serving if needed.
