Tips For Getting That Perfect Jewel Finish


Always bloom the gelatin fully before adding.

Ingredients


2 cups 100% fruit juice (pomegranate, cherry, cranberry, raspberry, orange, or grape)


¼ cup fresh lemon juice


½ cup granulated sugar (adjust depending on sweetness of juice)


3 tablespoons honey or light corn syrup


3 tablespoons unflavored powdered gelatin


2 tablespoons cold water


Optional: 2 tablespoons strained fruit purée


Optional: superfine sugar for dusting



Instructions


1. Lightly grease an 8x8-inch pan and line with parchment paper.



2. Sprinkle gelatin over cold water and let bloom 5 minutes.



3. In a saucepan over medium heat, combine juice, lemon juice, sugar, and honey. Heat gently until sugar dissolves completely. Do not boil.



4. Remove from heat and whisk in bloomed gelatin until fully dissolved and smooth.



5. Stir in optional purée if using.



6. Pour mixture through a fine sieve into prepared pan.



7. Let sit at room temperature 30 minutes, then refrigerate 3–4 hours until fully set.



8. Lift from pan and peel away parchment.



9. Lightly oil a sharp knife and cut into cubes or rectangles.



10. Leave glossy or dust lightly with superfine sugar before serving.
