  • 1 cup shredded mozzarella, divided

  • 1/3 cup mayonnaise

  • 1 small yellow onion, very finely minced

  • 6 cloves garlic, minced or finely grated, divided

  • 2 tbsp chopped fresh parsley, plus more for garnish

  • 1 1/2 tsp Italian seasoning

  • 1 tsp kosher salt

  • 1/2 tsp black pepper

  • 1/4 tsp crushed red pepper flakes (optional)

  • 3 tbsp unsalted butter, melted



Instructions


  1. Preheat the oven to 375°F and line a loaf pan or sheet pan with parchment paper.

  2. In a small bowl, mix the panko breadcrumbs with the milk and let sit for 5 minutes.

  3. In a small skillet, sauté the onion over medium heat until soft, about 4–5 minutes. Add 2 cloves of garlic and cook for 30 seconds, then remove from heat and cool slightly.

  4. In a large bowl, gently combine the ground chicken, soaked breadcrumbs, egg, Parmesan, 3/4 cup mozzarella, mayonnaise, cooked onion and garlic, parsley, Italian seasoning, salt, pepper, and red pepper flakes if using.

  5. Shape the mixture into a tall, compact loaf and place it in the prepared pan. Optionally, form 2 or 3 mini loaves.

  6. Bake for 35 minutes.

  7. Stir together the melted butter, remaining garlic, and the extra Parmesan.

  8. Remove the meatloaf from the oven, brush with the garlic butter mixture, and sprinkle with the remaining mozzarella.

  9. Return to the oven and bake for another 12–18 minutes until the internal temperature reaches 165°F.
