Cinnamon Sugar Snowball Cookies That Melt Like Butter On Your Tongue With A Cozy Spice Kiss And A Soft, Sparkly “Snow” Coating

A melt-away cookie made with butter, cornstarch, vanilla, and a double roll in cinnamon powdered sugar for perfectly round snowball cookies with a tender crumb and a smooth, cozy cinnamon finish.

There is something about the smell of cinnamon baking that instantly makes a kitchen feel warmer. These cinnamon sugar snowball cookies capture that feeling in the simplest, most comforting way. They are soft, delicate, and buttery, with just enough spice to feel cozy without overpowering their gentle sweetness.

The first time I made these, I was expecting something similar to a shortbread. But what came out of the oven was much lighter, softer, and almost airy in texture. They didn’t just crumble—they melted. And paired with that soft cinnamon coating, they quickly became one of those recipes that feels like it belongs to colder days and slow afternoons.

What makes these cookies so special is their balance. The buttery base is rich but not heavy, the cinnamon adds warmth without sharpness, and the powdered sugar coating gives them that soft, almost velvety finish. Each bite feels simple, but in the best possible way.

What Makes Snowball Cookies Truly Melt Away

Snowball cookies are all about texture. Instead of being chewy or crisp, they are designed to be delicate and tender, breaking apart easily and almost dissolving as you eat them.

Cornstarch is the key to that texture. It softens the structure of the dough by limiting gluten development, which creates that fine, soft crumb. Combined with powdered sugar, it gives the cookies their signature lightness and smooth bite.

Fun Kitchen Science Behind Cinnamon’s Warm Flavor

Cinnamon becomes more aromatic when heated, which is why these cookies smell so inviting as they bake. The warmth of the spice pairs beautifully with sugar, softening its intensity and turning it into something smooth and comforting.

The double coating of cinnamon powdered sugar helps build both flavor and texture. The first roll allows the sugar to cling, while the second creates that thicker, even finish that feels soft and slightly plush.

How To Keep Snowball Cookies Perfectly Round

These cookies are meant to hold their shape rather than spread. Chilling the dough before baking helps the butter stay firm longer, which allows the cookies to bake into smooth, rounded domes.

Rolling the dough evenly and gently also helps create that uniform shape. A smooth surface before baking leads to a more even coating and a more polished final look.

How To Get That Soft, Even Cinnamon Sugar Coating

The coating comes together in two steps. Rolling the cookies while they are still warm allows the sugar to stick and lightly melt into the surface.

Once cooled, a second roll fills in any gaps and creates a thicker, more even coating. This is what gives the cookies their soft, snowy finish with that hint of cinnamon throughout.

Equipment Needed

Baking sheet

Parchment paper

Mixing bowl

Cookie scoop

Shallow bowl for coating

Ingredients And Why Each One Matters

  • butter creates richness and a soft, tender bite

  • powdered sugar sweetens while keeping the texture smooth

  • vanilla adds warmth and depth

  • salt balances the sweetness

  • flour provides structure

  • cornstarch creates the melt-away texture

  • powdered sugar for coating builds the soft outer layer

  • cinnamon adds warmth and gentle spice

Time And Money Saving Tips

Make the dough ahead and freeze half as pre-rolled balls. This allows you to bake fresh cookies whenever you want with minimal effort.

For larger batches, mixing the coating in a bag can make rolling quicker and more even.

Substitutions That Still Work Well

A small pinch of nutmeg or cloves can be added for a deeper spice profile, but keeping it subtle maintains the soft cinnamon flavor.

For a lighter cinnamon taste, simply reduce the amount slightly in the coating.

Serving And Pairing Suggestions

These cookies pair beautifully with coffee, tea, or hot cocoa. Their soft texture and warm flavor also complement richer desserts, making them a perfect addition to a mixed dessert tray.

They bring a gentle, comforting flavor that balances well with chocolate, peppermint, or fruit-based treats.
