• 2 tablespoons heavy cream
Cheesecake Batter
• 24 ounces full-fat cream cheese, room temperature
• ¾ cup granulated sugar
• ¼ cup light brown sugar
• 3 large eggs, room temperature
• ¾ cup full-fat sour cream
• 2 tablespoons heavy cream
• 2 teaspoons vanilla extract
• 1 tablespoon cornstarch
• ½ teaspoon salt
Instructions
1. Preheat oven to 350°F. Line the bottom of a 9-inch springform pan with parchment and lightly grease the sides.
2. In a bowl, mix flour, sugar, yeast, and salt. Add warm milk, melted butter, egg, and vanilla. Knead until smooth and elastic. Cover and let rise 45–60 minutes, until doubled.
3. Mix cinnamon filling ingredients into a thick, spreadable paste.
4. Roll dough into a rectangle. Spread filling evenly, roll tightly from the long side, and slice into 1½-inch rolls.

6. Beat cream cheese on low speed until completely smooth. Add granulated sugar, brown sugar, cornstarch, and salt, mixing just until combined.
7. Add eggs one at a time on low speed, mixing only until incorporated. Mix in sour cream, heavy cream, and vanilla just until smooth.
8. Spoon half of the batter over the base. Add a few small dots of cinnamon filling and swirl gently.
9. Add remaining batter and repeat with fewer, wider swirls.
10. Bake 65–80 minutes until edges are set and center jiggles slightly. Turn oven off, crack door, and cool inside 1 hour.
11. Cool to room temperature, then refrigerate at least 8 hours before slicing.
